Zucchini Soup 1 medium red onion, evenly chopped Nonstick cooking spray 6 cups chicken stock 6 medium-size zucchini, evenly chopped salt & pepper 12oz frozen butternut squash, defrosted 1 cup plain soy milk Juice of 1/2 a lemon 1.Saute onion in large pot using non-stick cooking spray, until slightly soft. Add the chicken stock or broth, zucchini, salt, and pepper. cook until zucchini are soft. 2. Using a hand immersion blender, puree the onion-zucchini mixture until smooth. Add the defrosted butternut squash. Turn off the heat and add the soy milk and lemon juice. Season with more slat and pepper, to taste. I tried the soup without soymilk and it was pretty good!
